Step-by-step solution

The enzyme rennin is responsible for the coagulation of milk by converting soluble milk protein (casein) to insoluble milk protein (paracasien). This is the initial step of digestion of milk. Rennin is present in the infants stomach. In adults pepsin works in place of rennin.
