Soap with water forms:

When soap is mixed with water, it forms a lyotropic liquid crystal. Lyotropic liquid crystals are formed by amphiphilic molecules (such as soap molecules) in solution. These molecules have both hydrophilic (water-attracting) and hydrophobic (waterrepelling) parts. In the presence of water, soap molecules self-organize into structures where the hydrophobic parts cluster together and the hydrophilic parts interact with water molecules.
